Classic Southern Pot Roast with Vegetables

  1. Season and Sear: Rub the chuck roast with salt, pepper, and garlic powder. Heat oil in a skillet over medium-high heat and sear the roast on all sides until browned.

  2. Prepare for Cooking: Transfer the seared roast to a slow cooker or Dutch oven. Add chopped onion, carrots, potatoes, beef broth, and Worcestershire sauce around the roast.

  3. Cook:

    • Slow Cooker: Cook on low for 8 hours until the roast is fork-tender.

    • Oven: Preheat oven to 160°C (325°F) and cook covered for 3–4 hours until tender.

  4. Serve: Remove the roast and vegetables, slice or shred the meat, and serve with the cooking juices as gravy over the vegetables.
