Ingredients

  • 2 lbs collard greens, washed, stems removed, and chopped

  • 2 tbsp olive oil or bacon grease

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 1–2 jalapeños or hot peppers, sliced (adjust to heat preference)

  • 1 smoked ham hock, smoked turkey leg, or 4 slices bacon (optional, for smoky flavor)

  • 4 cups chicken broth or water

  • 1 tsp salt (to taste)

  • ½ tsp black pepper

  • ½ tsp red pepper flakes or cayenne pepper

  • 1–2 tbsp apple cider vinegar

  • Hot sauce (optional, for serving)
