Step 1 – Prep the Greens
Wash collard greens thoroughly to remove grit. Remove tough stems and chop leaves into bite-sized pieces.
Step 2 – Sauté Aromatics
In a large pot or Dutch oven, heat olive oil or bacon grease over medium heat. Add onions and garlic, cooking until fragrant. Stir in sliced jalapeños and cook 1–2 minutes.
Step 3 – Add Smoky Flavor
Add ham hock, smoked turkey, or bacon if using. This infuses the greens with a rich, smoky taste.
Step 4 – Cook the Greens
Stir in collard greens. Pour in chicken broth or water to just cover them. Season with salt, black pepper, and red pepper flakes (or cayenne).
Step 5 – Simmer Until Tender
Cover and simmer on low heat for 45–60 minutes, stirring occasionally, until greens are tender and flavorful.
Step 6 – Finish with Tang
Stir in apple cider vinegar. Taste and adjust seasoning with more vinegar, salt, or hot sauce as desired.
