Tangy Key Lime Cake with Cream Cheese Frosting

  1. Prepare the Pans: Preheat oven to 350°F (175°C). Grease three 8-inch round cake pans.

  2. Mix the Batter: In a large bowl, beat together lemon cake mix, oil, orange juice, eggs, and lime gelatin until well combined and smooth.

  3. Bake the Cakes: Divide the batter evenly into prepared pans. Bake 16–18 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool completely.

  4. Make the Frosting: In a large bowl, beat cream cheese and butter until light and fluffy. Add confectioners’ sugar and lime juice, mixing until smooth.

  5. Assemble: Place one cake layer on a serving plate, spread with frosting, then stack the next layer and repeat. Frost the outside and top of the cake.

  6. Chill & Serve: For best results, chill the cake for at least 30 minutes before slicing.
