Prep the Cucumbers: Wash and pat dry. Peel if desired, then slice thinly with a knife, mandoline, or spiralizer.

Add Onion (Optional): If using, thinly slice the red onion and place it in a bowl with the cucumbers.

Make the Dressing: In a separate bowl, whisk together sour cream, mayonnaise, dill, lemon juice, salt, and black pepper. Adjust seasoning to taste.

Combine and Chill: Pour the dressing over the cucumbers (and onion if added). Toss gently to coat evenly. Cover and refrigerate for at least 30 minutes to let the flavors meld.
