Ingredients

· 2 (14.75 oz / 439g) cans of salmon, drained
· 2 large eggs, lightly beaten
· 1/3 cup (40g) finely chopped onion (or 2 tbsp dried minced onion)
· 1/4 cup (30g) finely chopped bell pepper (any color, optional)
· 1/3 cup (35g) breadcrumbs (Panko for extra crunch, or regular)
· 2 tbsp fresh parsley, chopped (or 2 tsp dried)
· 1 tsp Worcestershire sauce
· 1 tsp Old Bay seasoning (or ½ tsp paprika + ¼ tsp garlic powder)
· 1/4 tsp black pepper
· 2-3 tbsp oil for frying (canola, vegetable, or avocado oil)
· Lemon wedges, for serving
