Southern-Style Lima Beans: Creamy, Savory, and Comforting

For best results, soak the dried lima beans overnight in water. For a quick soak, boil the beans for 2–3 minutes, then remove from heat and let sit for 1 hour. Drain before cooking.

Step 2: Prepare the Flavor Base
In a large pot, heat butter or bacon fat over medium heat. Sauté chopped onions, garlic, and bell pepper (if using) until soft and fragrant.

Step 3: Add Smoked Meat
Stir in chopped bacon or add a ham hock to the pot. Cook for a few minutes to render the fat and release smoky flavor.

Step 4: Simmer the Beans
Add the soaked and drained lima beans to the pot. Pour in water or chicken broth and add salt, pepper, thyme, and sugar (if using). Bring to a boil, then reduce heat and simmer gently, partially covered, for 1–2 hours, stirring occasionally, until beans are tender and flavors have melded.

Step 5: Serve
Remove ham hock if used, shred any meat, and return it to the beans. Adjust seasoning if needed. Serve warm as a side dish.
