Preheat oven: Set to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line with parchment paper.

Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and allspice.

Combine wet ingredients: In a large bowl, beat sugar and oil until smooth. Add eggs, one at a time, mixing well after each. Stir in pumpkin puree, water (or milk), and vanilla extract.

Bring it all together: Gradually add the dry mixture into the wet, stirring gently until just combined. Do not overmix.

Add mix-ins: Fold in nuts, chocolate chips, or dried fruit if desired.

Bake: Pour batter into prepared loaf pan. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.

Cool & serve: Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
